Storage of Cakes IMPORTANT: The following applies ONLY to rich fruit cake. Neither Madeira nor Sponge cake are suitable for long term storage. Both Madeira and Sponge cake should be consumed within 4 days of the event. While it is possible to retain a whole tier of a fruit cake for future use, in the current living environment (dry, centrally heated houses), I do not recommend long term storage and cannot guarantee the condition of the cake after storage. However, should you wish to store a tier of your fruit cake, my advice would be that it should be uncut and left on the cake board, then wrapped in greaseproof paper (parchment), and placed in a clean cardboard box surrounded by crushed material. The box should then be closed using string or sticky tape. The cake should be stored in a cool, airy, ambient temperature, well away from any heat source. I regret I cannot offer packaging or storage facilities. It is also possible to store a cake in a deep freeze by removing the cake board, and placing the cake in a plastic bag with a freezer seal. In either case the cake should be examined for any deterioration before use, and, if satisfactory will, in most cases require to be re-iced and decorated.
